RESUMEN

The present study analyzed the content of total mercury (THg) and selenium (Se) in the muscle of shrimp collected from local markets in the 11 Pacific coastal states of Mexico. Methylmercury (MeHg) concentration, Se:Hg ratio, health benefits value from selenium consumption (HBVSe) and the permissible weekly consumption were estimated to assess the health risk to consumers. All THg and Se concentrations were below the maximum permissible limits. All hazard quotient (HQ) values were <1, however in Hermosillo, Culiacán and Guadalajara, the Se:Hg ratio and HBVSe were <1 and negative, due to the low concentrations of Se. As a general conclusion, there is no risk nor benefit from the consumption of shrimp from the Pacific coast of Mexico due to its Hg and Se content.

This study analyzed total mercury (THg), and selenium (Se) in edible tissues of white shrimp (Litopenaeus vannamei), blue shrimp (L. stylirostris) and brown shrimp (F. californiensis), from three states of the Northwest of Mexico in September and October 2017. Concentrations of THg and Se in the muscle were between 0.026 and 0.829 and 0.126-1.741 µg/g dry weight (dw), respectively. Significant differences were observed among Hg concentration of Sonora and Nayarit and among Se concentration of Sinaloa and Nayarit. In addition, the health risk assessment (HQ) in the three species of shrimp was between 0.550 and 0.607. All Se:Hg molar ratios were > 1 and positive HBVSe values that showed that shrimp from Northwest of Mexico does not represent a risk to human health.

The coastal lagoons of the Gulf of California support important traditional fisheries and mollusc cultures (generally oysters) and receive important volumes of agricultural, industrial and urban effluents, consumption of the oysters could pose risk to human health. The concentrations of arsenic (As), cadmium (Cd), copper (Cu), iron (Fe), lead (Pb), and zinc (Zn) in the oysters Saccostrea palmula and Crassostrea corteziensis, from four coastal lagoons (Altata, AL; Macapule, ML; Navachiste, NL; El Colorado, ECL) in the Southeast Gulf of California, were seasonally evaluated (summer 2019-spring 2020). The order of magnitude of potentially toxic elements concentrations in the soft tissue in both oyster species and at all sites was Zn > Fe > Cu > As > Cd > Pb. Cadmium, Cu, Pb, and Zn exceeded the maximum permissible limits in more than one sampling site. The highest concentrations (mg kg-1, wet weight) of As (4.2 ± 1.1, spring) and Cd (3.3 ± 0.7, autumn) were registered in S. palmula et al. and NL sampling sites, respectively. Crassostrea corteziensis presented higher levels of Cu (40.5 ± 6.7, spring), Pb (2.0 ± 0.4, spring), and Zn (96.9 ± 20.4, spring) in ECL and Fe (62.2 ± 25.4, autumn) in ML. The hazard quotient (HQ) values exceeded the safe level of 1 for Cd in S. palmula and C. corteziensis in NL for children (~ 16 kg weight). In addition, in children, the hazard index (HI) values in both species of oysters ranged from 0.7 to 2.1 and 0.6 to 1.9, respectively. On the other hand, the intake of the studied elements through the consumption of oysters would not induce adverse effects to human health (men and women weighing 70 and 60 kg, respectively); HQ and HI values were < 1.

Biological and fishery features of Panopea sp. clams have been studied in northwest Mexico because of their importance for human consumption. However, the content of pollutants in their tissues, along with their implications have not been addressed yet. The concentrations of cadmium (Cd), copper (Cu), mercury (Hg), and zinc (Zn) in soft tissues of Panopea generosa and P. globosa clams were examined in this region by atomic absorption spectroscopy. The metal concentrations (µg/g wet weight) ranged from 6.5 to 14.2, 0.97-8.09, 0.60-1.18, and 0.01-0.07, for Zn, Cu, Cd, and Hg, respectively. This study proposes that metal presence is related to weathering, upwelling, and drainage from adjacent agricultural lands to the coast. According to the Official Mexican Standard (NOM-242-SSA1-2009) and the World Health Organization (WHO, 2022), the metal content in siphon tissue indicates safe levels for human consumption.

Cadmium (Cd2+) and copper (Cu2+) are considered immunotoxic metals and their presence in combination in the aquatic environment may cause effects on shrimp species as Litopenaeus vannamei. Thus, this research evaluates the combined effects of Cd2+ and Cu2+ on shrimp inoculated with Vibrio harveyi bacteria. The experiments were performed at 96-h of exposure to sublethal concentrations of both metals. No mortality was observed in organisms exposed to the sum of Criterion of Continuous Concentration (ΣCCC) in Cd + Cu mixture and those inoculated with V. harveyi. Higher clotting times were recorded in Cd + Cu + V. harveyi treatment at higher metal concentrations. No significant differences (P > 0.05) were recorded in hemocyanin content between shrimp exposed to metals and those experimentally infected. Significantly higher (P < 0.05) total hemocyte count (THC) was recorded at 96 h exposure in the ΣCCC and 10% treatments of Cd + Cu + V. harveyi experiment. Regarding Cd + Cu + V. harveyi bioassay, the highest phenoloxidase (PO) activity was recorded in shrimp inoculated with V. harveyi (0.326 ± 0.031 PO units/mg protein) at 96-h exposure. The lowest PO activity was observed in organisms exposed to Cd + Cu + V. harveyi. Regarding superoxide dismutase (SOD) activity, shrimp exposed to higher metal concentrations at 96 h showed the lowest hemolymph activity (6.03 ± 0.62 SOD units/mL). Protein decrease was observed in organisms exposed to metal mixture. The results showed that L. vannamei could be more susceptible to V. harveyi when exposed to Cd + Cu.

RESUMEN

The objective of this review is to synthetize knowledge of the relationship between metals and oxidative stress in aquatic crustaceans (mainly shrimp and crabs) to analyze antioxidant responses when organisms are exposed to metals because the direct metal binding to the active site of enzymes inactivates most of the antioxidant systems. This study reviewed over 150 works, which evidenced that: (i) antioxidant defense strategies used by aquatic decapod crustaceans vary among species; (ii) antioxidant enzymes could be induced or inhibited by metals depending on species, concentration, and exposure time; and (iii) some antioxidant enzymes, as superoxide dismutase increase their activity in low metal levels and time exposures, but their activities are inhibited with higher metal concentrations and exposure time.

Mercury and selenium concentrations and Se:Hg molar ratio in edible muscle and hepatopancreas of the crab Callinectes arcuatus from coastal lagoons of northwest Mexico were determined using atomic absorption spectrophotometry. The three coastal lagoons were Santa María La Reforma (SMLR), Urías (UR), and Huizache-Caimanero (HC); samplings were carried out from December 2016 to October 2017. The mercury ranges in the muscle of C. arcuatus in SMLR, UR, and HC lagoons were 0.31-0.52, 0.15-0.45, and 0.22-0.55 µg g-1, respectively. In hepatopancreas, the values ranged from 0.08 to 0.15, 0.06 to 0.15, and 0.05 to 0.12 µg g-1 in SMLR, UR, and HC lagoons, in that order. For selenium concentrations in C. arcuatus muscle, the ranges 11.64-20.14, 14.88-19.71, and 15.27-29.51 µg g-1 were determined in SMLR, UR, and HC lagoons, respectively. While for hepatopancreas, the ranges were 34.34-44.13, 27.77-40.45, and 15.16-49.80 µg g-1, in that order. No significant relationships (p > 0.05) between mercury and selenium concentrations (in white meat and hepatopancreas) were observed in C. arcuatus carapace width and length. Se:Hg molar ratio values were 98.1 ± 20.8, 171.4 ± 81.6, and 176.8 ± 51.2 for SMLR, UR, and HC lagoons, in that order. This high ratio (> 1) in C. arcuatus edible muscle indicated that selenium concentration was sufficient to neutralize possible mercury toxicity, so it does not represent danger to humans when it is consumed.
